Satay
Make delicious satay with a rich flavor and a crispy touch of fried onions!
The best satay is homemade and, of course, topped with crispy fried onions.
Ingredients
For the satay
- 500g boneless chicken thighs or chicken breast, cut into cubes
- 2 cloves garlic, minced
- 2 cm piece of ginger, grated
- 2 tablespoons soy sauce
- 2 tablespoons ketjap manis (sweet soy sauce)
- 1 tablespoon sesame oil
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- Wooden skewers
For the peanut sauce
- 200ml coconut milk
- 3 tablespoons peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon ketjap manis
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1 teaspoon sambal oelek (or to taste)
- 1 clove garlic, finely chopped
Topping
- 100g crispy fried onions
Preparation
- In a large bowl, mix the garlic, ginger, soy sauce, ketjap manis, sesame oil, lime juice, brown sugar, ground coriander, and ground cumin.
- Add the chicken pieces to the marinade and stir well. Cover and let marinate in the fridge for at least 30 minutes(preferably longer for a deeper flavor).
- Heat the coconut milk in a pan over medium heat.
- Add the peanut butter and stir until fully dissolved.
- Mix in the soy sauce, ketjap manis, lime juice, brown sugar, sambal oelek, and garlic. Stir well and let the sauce simmer until thick and smooth. Set aside.
- Thread the marinated chicken pieces onto the wooden skewers.
- Heat a grill pan, barbecue, or frying pan over medium heat and lightly grease with oil.
- Grill the satay skewers for about 4-5 minutes per side until fully cooked.
- Place the grilled satay skewers on a serving platter.
- Sprinkle crispy fried onions over the satay.
- Drizzle the peanut sauce over the skewers or serve it separately as a dipping sauce.
