Ingredients

For the satay

  • 500g boneless chicken thighs or chicken breast, cut into cubes
  • 2 cloves garlic, minced
  • 2 cm piece of ginger, grated
  • 2 tablespoons soy sauce
  • 2 tablespoons ketjap manis (sweet soy sauce)
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Wooden skewers

For the peanut sauce

  • 200ml coconut milk
  • 3 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon ketjap manis
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon sambal oelek (or to taste)
  • 1 clove garlic, finely chopped

Topping

  • 100g crispy fried onions

Preparation

  1. In a large bowl, mix the garlic, ginger, soy sauce, ketjap manis, sesame oil, lime juice, brown sugar, ground coriander, and ground cumin.
  2. Add the chicken pieces to the marinade and stir well. Cover and let marinate in the fridge for at least 30 minutes(preferably longer for a deeper flavor).
  3. Heat the coconut milk in a pan over medium heat.
  4. Add the peanut butter and stir until fully dissolved.
  5. Mix in the soy sauce, ketjap manis, lime juice, brown sugar, sambal oelek, and garlic. Stir well and let the sauce simmer until thick and smooth. Set aside.
  6. Thread the marinated chicken pieces onto the wooden skewers.
  7. Heat a grill pan, barbecue, or frying pan over medium heat and lightly grease with oil.
  8. Grill the satay skewers for about 4-5 minutes per side until fully cooked.
  9. Place the grilled satay skewers on a serving platter.
  10. Sprinkle crispy fried onions over the satay.
  11. Drizzle the peanut sauce over the skewers or serve it separately as a dipping sauce.

Taste and enjoy!
